Sweet Potatos with Jalapeno Candied Pecans

This recipe finds yet another delicious use for the Powerful Pepper Company's Candied Jalapenos AKA Cowboy Candy. The sweet, spicy, and tangy rings are added in a layer on top of the spiced sweet potatoes and then topped with candied pecans for an amazing combination of flavors and textures. For Thanksgiving and Christmas, this is a side dish that you can make a few days in advance and just have ready to pop in the oven to reheat and serve.

Ingredients

1 Tbsp Candied Jalapeno Liquid

1 Egg Separated (white and yolk)

½ Cup Sugar

¼ tsp Cinnamon

¼ tsp black pepper

¼ teaspoon ginger
-
¼ teaspoon turmeric

½ cup Jalapeno candy chopped into bits

6 medium size sweet potatoes

5 tbsp butter
-
3 tbsp black strap molasses
-
2 tsp salt
-
1 Egg yolk
-
½ tsp cinnamon

¼ tsp black pepper

¼ tsp smoked paprika

¼ tsp ginger

¼ tsp coriander

1/8 tsp nutmeg

1/8 tsp allspice

1/8 tsp turmeric

Directions
Candied Pecan Topping
Preheat your oven to 275 degrees
Put your egg white into a bowl with the tablespoon of jalapeno candy liquid and whip until it’s light and frothy.
Mix your sugar and spices into another small bowl and mix to combine.
Put your pecans into a bowl and pour over 2/3 of the egg white mixture and stir to combine. You are looking to just coat the outside of the pecans without too much extra liquid.
Top with the sugar and spices and mix until everything is evenly coated. Pour out onto a lined baking sheet, this will be hard to clean up otherwise. Silicone or parchment paper, not aluminum.
Bake for 1 hour stiring every 15 minutes and then remove to cool.
Sweet potatoes
Poke holes in your sweet potatoes and place them on a lined baking sheet. Place them in the oven to bake. This can be done before the candied jalapenos go in and will get the potatoes started. You can then raise the heat once the pecans are out of the oven. Otherwise, bake sweet at 400 degrees until they are done. (About an hour) Stick a fork into them to check, if it slides in very easily they are done.
Let the sweet potatoes cool a bit or, if you’re like me, be vary careful and peel them while they are hot using a big spoon.
Cut butter into cubes (I should have done this) and add to the sweet potatoes along with the salt and spices and egg yolk. Mash everything together really well and transfer to your glass casserole dish. If it’s small you can use two.
Layer sweet potatoes on the bottom, your chopped jalapeno candy on top of that and a layer of candied pecans on top of that. Bake at 300 for another 30 minutes to an hour depending on if you started with the potatoes hot or cold.
Serve hot!
Recipe Note
