Simple and Spicy Grilled Zucchini

When you already have the grill fired up for some steaks or burgers there no reason to waste any of those coals if you can avoid it. Chances are you paid for those so let's maximize our use by adding some grilled Squash or Zucchini. They are perfect for the grill and relatively inexpensive as well as healthy. What's not to like?
We're going to use our Ghost BBQ rub for these veggies as well. Remember it's not all that hot as a seasoning since it's about 1% ghost pepper but it has that characteristically long burn so once you start eating these you have a nice warming spice that can last your whole meal. The other spices in the Ghost Pepper BBQ Rub also play a great role in adding some depth to this simple veggie.
Ingredients

2 Good size traditional or Mexican zucchini or summer squash.

2 tbsp olive oil

1 tbsp Ghost BBQ Rub
Directions
Slice Zucks. I like 1 inch chunks or long “steaks” depending on if you have a grill pan or not. Longer slices are less likely to fall through the cracks.
Add oil and toss. Shake the rub over oiled veggies and toss to evenly coat. Do this right before you are ready to grill, not in advance so that the salt does not have time to pull out too much moisture from the veggie.
Grill over hot coals until charred and BGBB on all sides. BEAUTIFUL GOLDEN BROWN BABY! Enjoy hot off the grill.
