Great on burgers, sandwiches, tacos, on BBQ, or right out of the jar into your face.

Ingredients
- 1 red onion, sliced
- 1 cup apple cider vinegar
- ½ cup water
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1tsp mustard seeds
- 1/2 tsp dried thyme
- 1 bay leaf
- Optional, thinly sliced jalapeño
Directions
Slice the onion to about 1/4 inch and add all ingredients to a small pot and heat, once it reaches a boil set a two-minute timer and then take it off the heat, pour it in a jar or other container, being careful with the boiling liquid cover and let cool. It should last in the fridge up to a month.
