Grilled Shiitake Mushroom Skewers

We found some fresh Shitake mushrooms and here is what we did with them! We add a nice salty, tangy and a little bit spicy marinade to these and it really brings out the meatiness of these mushrooms. You can substitute these for meat in a dish if you like.

Ingredients
1-2 lbs Shiitake mushrooms
2 tbsp Rice Vinegar
2 Tbsp Water
1 tbsp White Miso Paste
1 Tbsp. Sesame Oil
1 tsp Good Soy Sauce
1 tsp Gochujang
1 tsp Sir Ratchet or Sriracha Hot Sauce
1 tsp sugar or honey

Combine all of your ingredients except for the mushrooms into a small bowl and whisk until thoroughly combined. Use a fork or a small whisk for this task.

Remove the stems and then take a skewer though the mushroom center but the long way so that they can all lay flat. The skewer is really a way to make the grilling easier. If you have a grill that these won’t fall through, like a grill pan with smaller holes you can use that and you don’t need the skewers.
Brush the mushrooms with the marinade on the mushroom tops and set them over the coals to grill for about 3 minutes per side and brush the remaining marinade on the bottom side while they grill. Flip a few times so they don’t burn and once you have a nice sear pull them off the grill and serve them up as a side or main course with a steak or over some rice with some green onions to garnish.
