Try this on the carnitas for a real treat. But great on anything during the summer when you can grow or get really fresh Habaneros. By the way, fresh habaneros can be identified by their bright green stems and are easy to grow, even in a pot!

Easy Habanero Salad Topping

Ingredients

  • 3 habaneros, 1 red, 1 yellow, 1 green if you're fancy

  • 1/2 onion thinly sliced and cut in half again for shorter pieces
  • Juice of 3 limes
  • Salt to taste, for me about 1/2 teaspoon

Directions

  1. Make sure you wear gloves for this one and watch those fingers!
  2. VERY Thinly slice habaneros and onions with a super sharp knife. Add lime juice and salt and mix well. This is easy to do in an old soup to-go container, or plastic Tupperware, just add the ingredients and shake. Let it rest for a half hour at least. Good for 2 or 3 days in the fridge.
