We use some simple ingredients to really level up some tired chicken breast into something truly worthy of the term BBQ. After I made this I realized the original recipe was missing something so we added some bacon and avocado to the sandwich and it was outstanding. I'll leave it up to you to use what you have on hand but I definitely recommend those two items for that crunch and saltiness of the bacon and the added creamy texture of the avocado.

Directions
Make some Perfectly Juicy Grilled Chicken Breast using our amazing Ghost Pepper BBQ Rub instead of the salt and pepper. It’s a little bit spicy but not over the top. We are a flavor first company and the heat is nice and manageable even though we are using a really hot pepper.
Get your instant read thermometer (I like the thermopop) out and when the chicken hits about 130 internal we are going to brush it with our BBQ sauce on one side and flip and then apply the sauce to the other side. Flip after 3 or 4 minutes and re-apply the sauce until the chicken hits 160 internal and then pull it off to a tray and tent with some foil. We are looking for the sauce to firm up a bit and get tacky and maybe even a bit of char and caramelization.
Toast your buns on the grill and then top the bottom bun with a spoonful of BBQ sauce, then a piece of the BBQ chicken and some jalapeno slaw. Top that with 1/4 avocado per sandwich, jalapeno slices (as many or as few as you want) and 2 slices of bacon. I like a spoonful of mayo on the top bun (optional) and you are good to go. So much better than anything you are going to find out and about. Eat good food!
