Spicy pan fries for the win. Who doesn’t love potatoes?

Ingredients

1 large russet potato

1 tsp Salt
-
1 tsp Pepper
-
1 tsp Red pepper (cayenne or other spicy pepper powder)

4 tbsp of olive or vegetable oil
Directions
Cut the potatoes into nice thin fries and place in a bowl of ice water for 15 minutes. Rinse them off and place them on a kitchen towel and give them a pat to dry. This helps to remove the starch from the potato mad will make them crisp up a bit more.
- Make your dry spice mixture, equal parts of each salt, pepper, and red pepper. Make extra and keep it in your pantry to use on anything else that needs an extra kick of spice.
- Start a pan on the heat for a minute and add the oil.
- Add the potatoes once the oil is shimmery and hot.
- Fry, turning occasionally until nice and brown and crispy, it may take longer than you think. Be careful to gently turn these because they can break… but then a broken fry still tastes the same so who cares?
- Once they are all crispy and yummy, remove from the oil onto a paper towel lined trey and sprinkle your seasoning mix over the top until the desired spice and salt level are reached.
- Pair this with literally any dish.
