This recipe is going be referred to a lot in my upcoming recipes since this is a basic method to grill a perfect chicken breast. It is a healthy way to add a ton of flavor to those boring chicken breasts and make them really the star of the show. So weather you are looking to get into more lean proteins because you want to lose some weight or are bulking up and working out and tired of the same sad baked chicken this is a great way to make chicken breast more delicious, more juicy, and way more appetizing for your meal prep. And we are going to be using charcoal. The natural fire is the key to the flavor in this one. Cave man diet? You better be using wood and not gas to grill over!
Keep an eye on my recipes and coming up I'll show you how to do chicken breast in a pan as well if you do not have access to a grill. We are getting back to basics so we can level up our diet and make what sounds plain, absolutely delicious with just a tiny bit of extra effort.
Ingredients
-
1 Large Chicken Breast
-
Salt
-
Pepper
-
Vegetable Oil
Directions
Remove any fat from the chicken breast and then slice it so it is a uniform thickness. We call this butterflying the chicken. Check the video to see how. But basically we are cutting it so that it lays as flat as possible on the grill with a uniform thickness that will help cook it evenly.
Add a few good pinches of salt and pepper to each side and let it rest in a bowl while you fire up the grill. This will give time for the salt to penetrate the meat and make it even more tender and juicy. You can do this up to an hour before you cook. I just do it before I light the fire so I’m forced to wait until the coals are ready.
Add oil to the surface of the meat right before placing on the grill. Over a medium/high heat, ideally with about 6 or so inches between the chicken and the coals, grill 5 minutes per side until the internal temp reaches 160 and remove and wrap in foil to rest for an additional 5-10 minutes. Unwrap and enjoy. The chicken will continue to raise in temp after you wrap it until it peaks around 165 which is what you want.

Recipe Note
I like to use this base for my chicken pastas, or as a base for a chicken salad. Keep an eye out on our site for some ways to use this healthy simple grilled chicken breast.
Try one of our seasonings instead of the salt and pepper to add a ton of flavor, spice, and depth to this chicken!
