Q: How do I use up a lot of old hot sauce?
A: Make some boiled peanuts!
I usually throw at least 2 or 3 bottles of hot sauce into the pot when I'm making boiled peanuts for some extra flavor and heat. To be perfectly honest unless the flavor is really off the wall it doesn't really matter since the most prominent flavor in these is going to be peanut.
Most recipes will call for green but I use dried and just boil them for a LOT longer to get to my perfect peanut. They are easier to find and will last a lot longer before they go bad giving a fresher overall product. If you can get fresh right out of the ground green peanuts, good for you, use those and only boil for about an hour.

What peanuts are best for boiled peanuts? I would recommend Valencia if you can find them. You get more nuts per shell and the shells are not too thick so they take a bit less time than say Virginia Peanuts.
Ingredients

1/6 bushel of dry peanuts

2 gallons H2O

1.5 Cups Salt

3-4 old bottles of hot sauce
Directions
Dump all ingredients in a pot and boil it for three hours. It’s not fancy, y’all.
Let it sit covered overnight and boil it again the next day for 3 more hours. That’s it. Taste them to see how done they are as you go and if you get to a point where they are a good texture and flavor for you, just stop cooking them. Letting them rest overnight allows the liquid to penetrate the shells.
Serve them up freshly boiled out of the pot or, once cooled bag into sandwich bags and freeze portions to whip out whenever you need a southern snack.
